Making Whole roasted Mediterranean Cauliflower
Tasty, Healthy and VERY satisfying. No other way to describe roasted Mediterranean Cauliflower. It’s such a delicious side dish, you should plan on 1 cauliflower head for 3 people. Cauliflower is very light and not filling, so anticipate to cut this whole roasted cauliflower into thirds after it comes out of the oven. Your kitchen is going to smell so good. Your family will be very impressed.
I like to ROAST the cauliflower WHOLE , only because the presentation on the dinner table is fabulous. You can easily make this recipe with cut cauliflower. The only difference is you can pour the seasoned oil and toss in a medium size bowl, then layer on a sheet pan for roasting. You wouldn’t need a pastry make it this way.

There are limitless ways to season the Cauliflower. The sky’s the limit. You can make it a la Mexican, with a chilli and olive oil rub, sprinkle cojita and cilantro and bake. Italian flavors using olive oil, salt, pepper, fresh oregano, French flavors using cream, butter, salt pepper, thyme, herbs de provence.
