This dish is one that I didn’t appreciate until I was an adult. The idea of eating herring wasn’t something my palate could handle. Then something miraculously happened – I grew up and discovered, that I like all sorts of fish and vegetables and various food combinations. Bring it on, I want to try it all. This dish has always been served at Haitian parties. It’s usually served with small little soft rolls. It’s very rich and filling. I usually want to eat 2 rolls full of the chiktay but if I do, I won’t be able to eat anything else. So I limit myself to one roll filled with this herring goodness. It’s salty, spicy with crunchy onions and peppers……. joy joy joy it’s delicious…..!!!
