A very Delicious Banana Rum Upside Down Cake recipe
Caribbean Banana Rum Upside Down Cake contains simple ingredients that are naturally delicious together: banana, rum, vanilla, brown sugar and cinnamon. These are the flavors that take me to my happy place. The marriage of bananas with rum and juicy caramelized brown sugar with a dash of cinnamon is complete perfection in both aroma and taste.
Caribbean desserts have a natural affinity for these deep rooted, easily attainable, native ingredients. This particular recipe showcases the best of each ingredient. I always recommend to try and source the best organic produce, I like Tahitian or Madagascar vanilla bean, organic brown sugar, dark Caribbean Rum. Since I’m originally from Haiti, Im partial to Barbancourt Rhum. It’s amber color and Strong flavor goes a long way- It’s a Very Strong Rum! Barbancourt also distills a multitude of flavored rums. Barbancourt Rhums are great to cook and bake with.
Bananas are the low hanging fruit, as a result you can easily buy them anytime of the year, wherever you may live. I suggest buying ripe unbruised bananas. Especially relevant, the bruised flesh may taste super sweet, but I tend to believe it never looks good in the cake, when baked. Consequently, make sure they’re ripe and not overly bruised. A little piece of brown will be fine, but an entire banana all brown NOT SO GOOD.

The baking technique is the same. In a 10″ pan
- the first layer is melted butter, brown sugar and rum.
- the second layer is the sliced fruit (banana or pineapple)
- the third layer is the cake batter.
It’s the same technique with a different fruit. Nevertheless it’s an amazing recipe that will wow any dinner party or brunch. Serve this with whipped cream, or a delicious vanilla bean ice cream, It will be a beautiful moment.
